The recipe I was given (if you don't believe how lush they were, go ahead and try it....you know you want to......):
Ingredients:
125g butter, softened
100g light brown soft sugar
125g caster sugar
1 egg, lightly beaten
1 tsp vanilla extract
225g self-raising flour
½ tsp salt
200g chocolate chips
- Preheat oven to 180°C (Gas Mark 4)
- Cream butter and sugars then add the egg and vanilla extract
- Sift in the flour and salt, then the chocolate chips
- Roll into walnut size balls, for a more homemade look
- Place on ungreased baking paper. If you want to have the real Millies experience then bake for just 7 minutes, till the cookies are just setting - the cookies will be really doughy and delicious. Otherwise cook for 10 minutes until just golden round the edges
- Take out of the oven and leave to harden for a minute before transferring to a wire cooling rack
I've made it twice since but was a little displeased as I added too much butter the second try (I have no scales so I had estimated it). I've bought a lot of chocolate drops now so I'm prepared when I have a cookie urge.
Cookie cookie cookie.........
I had a dream last night. I was baking brownies and I had to make 70-odd something of them. I've no idea why but I was trying out my first batch. And now it has me thinking of cookies.
